Beer Cheese Soup

Not for the weak of heart!

  • 1/2c butter
  • 1/4c minced onion
  • 1c flour
  • 4c hot chicken broth
  • 1-1/2c heavy cream
  • 16oz Cheez Whiz
  • 6oz beer
  • 1T Worcestershire
  • 1/4c chives, opt.


Melt butter. Sauté onions in butter.
Add flour, with a little chicken broth to make a thick paste.
Continue to gradually add broth, stirring constantly to avoid lumps.
Add cream and mix till smooth. KEEP STIRRING.
Add Cheez Whiz. Mix till all smooth and melted.
Add beer, Worcestershire, and chives.
Simmer 15 minutes, stirring constantly.
